Hand Cut Noodle Stir Fry #Recipe #Vegan
Here is an easy, delicious and inexpensive recipe that will be a great base to modify. In less than 20 minutes you turn out a beautiful meal that you’ll be proud to serve anyone.

Hand Cut Noodle Stir Fry
Ingredients
- 2 cloves of garlic minced
- 1 inch of ginger root minced
- 3 cups of rough chopped veggies to stir fry ( Suggestions: broccoli, onions, carrots, cabbage, bell pepper, zucchini, mushrooms, etc…)
- 3 tablespoons soy sauce
- 6 tablespoons water
- 1 cup all purpose flour
- 3-4 tablespoons oil, ( veggie, canola, peanut)
- 2-3 scallions tops chopped into rounds
- 1 teaspoon chili oil (optional)
Directions
Noodles
- in a bowl combine the water and flour and massage into a paste
- dump the mixture onto a floured counter and kneed the mixture
- The dough needs to be a firm, dry dough so add more flour a little at a time if necessary
- with a rolling pin roll out the dough to approximately 1/8th of an inch
- dust the top of the dough with more flour
- roll the dough into a cylinder
- Transfer your roll to a cutting board and with a sharp knife slice your roll into small 1/8 inch strips
- Unroll your all of the spirals to reveal your noodles
- Add your noodles into a pot of boiling water and boil for 3-4 minutes until they are cooked through
- drain well and set aside
Stir Fry
- Heat wok or saute pan on high heat
- Pour 3-4 tablespoons of oil in the wok
- As the oil starts to smoke add your garlic and ginger ( don’t burn the garlic )
- Quickly stir the mixture and add your veggies
- Start to stir fry everything together, adding additional oil if necessary
- As the veggies start to soften add the noodles and continue to stir fry
- Break up the noodles if necessary
- Pour the soy sauce and chili oil along the side of the wok and stir fry to coat everything evenly
- Shut of the heat and serve
- garnish with some chopped scallions

Will have to try this! We’ve recently (re-)discovered the joy of home-made pasta, when ‘Santa’ brought DH an extruder for Christmas. We haven’t really made our own since having kids, but turns out the girls are fascinated by both the extruder and the roller. Will have to try hand-cut too.
Hi Sasha. I love homemade pasta but sometimes pulling out the extruder is a pain in the butt. Plus hand-cut noodles have a chunkier texture that I love in some dishes. Let me know what you think if you take this one.
