Candied Pumpkin Pieces #Recipe
The deliciousness of Pumpkin in bite sized treats. This recipe takes a bit of time to make but it’s easy to prepare and well worth it when you get to munch on them.

Candied Pumpkin Pieces
Ingredients
- 2 cups of pumpkin pieces around 2 inch cubes ( I used some fancy cutters but cubes will do )
- 1 tablespoon of ground cinnamon
- 1 cup dark brown sugar
- 1 cup granulated sugar
- 2 cups water
Directions
- In a small pot add your pumpkin, cinnamon, and cover with water
- On medium heat simmer pumpkin until tender
- Drain the pieces and rinse well
- In the same pot add the brown and granulated sugar with the 2 cups of water
- Bring sugar mixture to a simmer and add the pumpkin pieces
- Simmer for 15-20 minutes
- Take pot off of the heat and let the pumpkin sit in the sauce overnight
- The next day with a slotted spoon remove the pumpkin to a wire rack
Put the pieces aside and let dry for a few days ( or put them in a dehydrator at 140 degrees for a day or two )
Store in a cool dry place

Hi Felisha – Any particular type of pumpkin that you recommend? Pie pumpkins? Or will any old type do?

Hi Gwen, I would feel comfortable making this with any pumpkins that you would cook with. Pie pumpkins would be a safe start. I used a larger pumpkin that I could cut more pieces out of and they tasted very delicious. Hope this helps. BTW you can use this same recipe and substitute sweet potato.

Cool idea! A few weeks ago I candied lemon but forgot I had them in the oven drying out. Then I preheated for another dish – Smokin Eureka! Maybe the pumpkin will redeem me. We had several pop up in the garden this year from seeds in the compost.
